While we do have the tradition of eating dumplings on important holidays such as Lunar New Year and Winter Solstice, many people enjoy eating dumplings on a regular basis. There are many different flavors, but the recipe we're sharing is one of the most classic and commonly seen: pork and cabbage or chive dumplings.
Ingredients (for roughly 60 dumplings) :
2Lbs ground pork
1/4 white cabbage
2-3 green onions (scallions)
1tbs grated ginger
3tbs soy sauce
1tbs sesame oil
1tbs rice cooking wine
Salt and white pepper to taste
(Optional) 7-8 chives
Chop the cabbages, add 2 tbs of salt and mix it to draw out the water then drain it.
Add grated ginger, soy sauce, sesame oil, egg, rice cooking wine, salt, and white pepper into the ground pork.
Mince the green onions and add it into the bowl with the cabbages. Thoroughly mix it all together. (*For pork and chive fillings*) Cut the chives to 1cm and add it into the bowl with the green onions instead of the cabbages.
Assembling the dumplings:
Prepare a small bowl of water on the side.
(Depends on the size of the dumpling wrapper you got) Add roughly 1 tsp of filling to the center of a dumpling wrapper.
With your finger, swipe half of the edge of the wrapper with a little water. Fold in half, and use your fingers to seal it. Repeat with the remaining fillings and wrappers.
There are many ways to cook them, boil, steam or pan-fried, you could cook it however you like it! There will most likely be extra, but you could always freeze them and eat them later!
